Carrot Ginger Salad

Ingredients

  • 4 large carrots, peeled and grated
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 cup of raisins
  • 1/4 cup of fresh ginger, grated
  • 1/4 cup of fresh cilantro, chopped
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon of honey
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables: In a large bowl, combine the grated carrots, chopped red and yellow bell peppers, and raisins. Mix well.
  2. Make the Dressing: In a small bowl, whisk together the grated ginger, olive oil, lemon juice, and honey. Season with salt and pepper to taste.
