Blissful Berry Breakfast Bars

Ideal for busy mornings, these breakfast bars provide a burst of energy to start your day. The mix of wholesome ingredients creates a gourmet experience that combines taste, nutrition, and a touch of indulgence.

Ingredients

  • 1 cup of rolled oats
  • 1/2 cup of whole-wheat flour
  • 1/4 cup of almond flour
  • 1/4 cup of honey or maple syrup
  • 1/4 cup of unsweetened applesauce
  • 1/4 cup of almond butter
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 cup of fresh or frozen blueberries
  • 1/4 cup of chopped nuts (such as almonds or walnuts)
  • 1 tablespoon of ground flax seeds (optional, for added nutrition)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole-wheat flour, almond flour, baking powder, and salt.
  3. Blend Wet Ingredients: In another bowl, whisk together the honey or maple syrup, applesauce, almond butter, and vanilla extract until smooth.
  4. Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries and chopped nuts.
  5. Pour and Spread: Pour the mixture into the prepared baking dish, spreading it evenly with a spatula. Sprinkle flax seeds on top, if using.
  6. Bake: Place in the oven and bake for 25-30 minutes, or until the bars are golden brown and a toothpick inserted into the center comes out clean.
  7. Cool and Cut: Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper. Cool completely on a wire rack before cutting into bars.
