Ingredients
For the Filling:
- 1 tablespoon of olive oil
- 1 large onion, diced
- 2 garlic cloves, minced

- 1 cup of green lentils, rinsed and drained

Instructions
- Prepare the Filling:
- Heat the olive oil in a large pan over medium heat. Add the onion and garlic, sauté until translucent.
- Add the carrots, celery, mushrooms, and red bell pepper. Cook for about 5-7 minutes until the vegetables begin to soften.
- Stir in the lentils, vegetable broth, tomato paste, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat and let simmer for about 30 minutes or until the lentils are tender. Stir occasionally and add more water if necessary.
- Once the lentils are cooked, stir in the frozen peas and let them heat through. Adjust seasoning if needed.
