Vegan Cottage Pie

This plant-based version of the traditional British comfort food replaces meat with lentils and vegetables, providing plenty of fiber and protein. It’s perfect for those following a vegan lifestyle or anyone looking to enjoy a meat-free dish without sacrificing flavor.

Ingredients

For the Filling:

  • 1 tablespoon of olive oil
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup of mushrooms, chopped
  • 1 red bell pepper, diced
  • 1 cup of green lentils, rinsed and drained
  • 2 cups of vegetable broth
  • 1 tablespoon of tomato paste
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 1 cup of frozen peas

For the Mashed Potato Topping:

  • 4 large potatoes, peeled and cubed
  • 1/4 cup of almond milk (or any plant-based milk)
  • 2 tablespoons of vegan butter
  • Salt and pepper to taste

Instructions

  1. Prepare the Filling:
    • Heat the olive oil in a large pan over medium heat. Add the onion and garlic, sauté until translucent.
    • Add the carrots, celery, mushrooms, and red bell pepper. Cook for about 5-7 minutes until the vegetables begin to soften.
    • Stir in the lentils, vegetable broth, tomato paste, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat and let simmer for about 30 minutes or until the lentils are tender. Stir occasionally and add more water if necessary.
    • Once the lentils are cooked, stir in the frozen peas and let them heat through. Adjust seasoning if needed.
  2. Prepare the Mashed Potato Topping:
    • While the filling cooks, boil the potatoes in a large pot of salted water until tender, about 15 minutes.
    • Drain the potatoes and return them to the pot. Add the almond milk, vegan butter, salt, and pepper. Mash until smooth and creamy.
  3. Assemble and Bake:
    • Preheat your oven to 400°F (200°C).
    • Spread the lentil and vegetable filling evenly in a baking dish.
    • Spoon the mashed potatoes over the filling, smoothing the top with a spatula.
    • Bake in the preheated oven for about 20-25 minutes, or until the top is slightly golden.
  4. Serve:
    • Let the pie cool for a few minutes before serving.
