Start your day with a hearty dish that provides a burst of flavor and nutrition. This savory casserole is also great for meal prep, as it can be made ahead of time and reheated for a quick and nourishing breakfast throughout the week.

Ingredients

  • 1 lb of ground turkey sausage
  • 1 tablespoon of olive oil
  • 1 cup of onion, diced
  • 1 cup of bell pepper (any color), diced
  • 2 cups of fresh spinach
  • 8 large eggs
  • 1 cup of milk (or a milk alternative)
  • 1/2 cup of shredded reduced-fat cheddar cheese
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried oregano
  • 1 cup of whole-wheat bread cubes (optional)
  • Non-stick cooking spray

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with non-stick cooking spray.
  2. Cook the Turkey Sausage: In a large skillet, heat the olive oil over medium heat. Add the ground turkey sausage and cook until browned and fully cooked, breaking it into crumbles as it cooks. Remove from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add the diced onions and bell peppers. Sauté until the onions are translucent and the peppers are tender. Add the spinach and cook until wilted. Remove from heat.
  4. Mix the Wet Ingredients: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and oregano.
  5. Assemble the Casserole: In the prepared baking dish, layer the sausage, sautéed vegetables, and bread cubes (if using). Pour the egg mixture over the top, ensuring it covers all ingredients. Sprinkle the shredded cheddar cheese evenly over the top.
  6. Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
  7. Cool and Serve: Allow the casserole to cool for a few minutes before slicing. Serve warm and enjoy!
