Turkey Quinoa Soy Salad

Ingredients

  • Turkey Filet:
    • 1 lb of turkey breast filet, sliced into strips
    • 1 tablespoon of olive oil
    • Salt and pepper to taste
    • 1 teaspoon of garlic powder
    • 1 teaspoon of paprika
  • Quinoa:
    • 1 cup of quinoa
    • 2 cups of water
    • Pinch of salt
  • Salad:
    • 1 cup of cherry tomatoes, halved
    • 1 cucumber, diced
    • 1 bell pepper (any color), diced
    • 1/2 of a red onion, thinly sliced
  • Dressing:
    • 2 tablespoons of low-sodium soy sauce
    • 1 tablespoon of olive oil
    • 1 tablespoon of lime juice
    • 1 teaspoon of honey
    • 1 teaspoon of fresh ginger, grated

Instructions

Prepare the Quinoa
  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, bring 2 cups of water to a boil.
  3. Add the quinoa and a pinch of salt, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  4. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
Cook the Turkey
  1. Season the turkey strips with salt, pepper, garlic powder, and paprika.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the seasoned turkey and cook for about 5-7 minutes, turning occasionally until fully cooked and golden brown.
  4. Remove from heat and set aside.
Assemble the Salad
  1. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, and red onion.
  2. In a small bowl, whisk together the soy sauce, olive oil, lime juice, honey, and ginger to make the dressing.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Add the cooked turkey strips on top of the salad.
Serve
  • Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld.
