Loved for its simplicity and deliciousness, this breakfast skillet has become a favorite among many households. It’s perfect for those seeking a nutritious, flavorful meal that doesn’t require a lot of time or complicated preparation.

Ingredients

  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 medium tomatoes, diced
  • 1 can (5 oz) of tuna in water, drained
  • 4 large eggs
  • Salt and pepper to taste
  • 1 teaspoon of dried oregano
  • Chopped fresh parsley for garnish

Instructions

  1. Prepare the Skillet: Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
  2. Add Tomatoes: Stir in the diced tomatoes and cook for about 5 minutes until they start to soften and release their juices.
  3. Add Tuna: Flake the drained tuna into the skillet and mix well with the tomatoes and onions. Season with salt, pepper, and oregano.
  4. Cook the Eggs: Make four small wells in the mixture and crack an egg into each well. Reduce the heat to low, cover the skillet, and cook until the eggs are set to your liking, about 5-7 minutes for runny yolks.
  5. Garnish and Serve: Sprinkle with fresh parsley. Serve hot and enjoy!
