Sweet Potato and Orange Muffins

Ingredients

  • 1 medium sweet potato, mashed
  • 1 1/2 cups of whole-wheat flour

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. Prepare the Sweet Potato: Peel and cube a medium sweet potato. Boil until tender, then mash until smooth. Allow to cool slightly.
  3. Mix Dry Ingredients: In a large bowl, combine the whole-wheat flour, rolled oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix thoroughly.
  4. Mix Wet Ingredients: In another bowl, whisk together the eggs, orange juice, applesauce, olive or coconut oil, and vanilla extract. Stir in the orange zest and mashed sweet potato.
