Sweet Carrot Fritters

Sweet carrot fritters are a wonderful way to enjoy the natural goodness of carrots in a fun and tasty form. They’re crispy on the outside and tender on the inside, with a naturally sweet flavor. Ingredients

  • 2 cups of grated carrots (about 3-4 medium carrots)
  • 1/2 cup of whole-wheat flour
  • 1/4 cup of rolled oats
  • 2 tablespoons of honey or maple syrup
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/4 teaspoon of salt
  • 1 large egg, beaten
  • 1/4 cup of unsweetened applesauce
  • 1 tablespoon of coconut oil

Instructions

  1. Prepare the Batter:
    • In a large bowl, combine the grated carrots, whole-wheat flour, rolled oats, honey or maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
    • Add the beaten egg and unsweetened applesauce to the carrot mixture, and stir until all ingredients are well combined.
  2. Cook the Fritters:
    • Heat the coconut oil in a large non-stick skillet over medium heat.
    • Scoop about 2 tablespoons of the carrot mixture for each fritter, and gently place it in the skillet. Flatten the fritters slightly with a spatula.
    • Cook for about 3-4 minutes on each side, or until golden brown and cooked through.
    • Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
  3. Serve and Enjoy:
