Ingredients
- 2 cups of grated carrots (about 3-4 medium carrots)
- 1/2 cup of whole-wheat flour
- 1/4 cup of rolled oats
- 2 tablespoons of honey or maple syrup
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1/4 teaspoon of salt
- 1 large egg, beaten
- 1/4 cup of unsweetened applesauce
- 1 tablespoon of coconut oil
Instructions
- Prepare the Batter:
- In a large bowl, combine the grated carrots, whole-wheat flour, rolled oats, honey or maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
- Add the beaten egg and unsweetened applesauce to the carrot mixture, and stir until all ingredients are well combined.
 
- Cook the Fritters:
- Heat the coconut oil in a large non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the carrot mixture for each fritter, and gently place it in the skillet. Flatten the fritters slightly with a spatula.
- Cook for about 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
 
- Serve and Enjoy:
- Serve warm and enjoy the fritters on their own or with a dollop of yogurt or a drizzle of additional honey.
