Ingredients
- 1 1/2 lbs of boneless, skinless chicken thighs
- 1/4 cup of honey
- 1/4 cup of fresh lemon juice
- 2 tablespoons of low-sodium soy sauce
- 1 tablespoon of olive oil
- 3 garlic cloves, minced
- 1 teaspoon of fresh ginger, grated
- 1/4 teaspoon of red pepper flakes (optional)
- Salt and pepper to taste
- 1 tablespoon of cornstarch
- 1 tablespoon of water
- Sliced green onions and sesame seeds for garnish (optional)
Instructions
- Prepare the Marinade:
- In a bowl, whisk together the honey, lemon juice, soy sauce, olive oil, minced garlic, grated ginger, and red pepper flakes.
- Marinate the Chicken:
- Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken and seal the bag or cover the dish. Refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor.
- Cook the Chicken:
- Preheat your oven to 375°F (190°C).
- Heat a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade. Season the chicken with salt and pepper.
- Sear the chicken in the skillet for about 3-4 minutes on each side, until browned.
- Make the Sauce:
- While the chicken is searing, pour the reserved marinade into a small saucepan. Bring it to a simmer over medium heat.
- In a small bowl, mix the cornstarch and water to create a slurry. Add this to the simmering marinade, stirring constantly until the sauce thickens, about 2-3 minutes.
- Bake the Chicken:
- Pour the thickened sauce over the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C).
- Serve:
- Once cooked, remove the chicken from the oven and let it rest for a few minutes. Garnish with sliced green onions and sesame seeds if desired.
