Seared Chicken with Creamy Mushroom Sauce

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 tablespoon of unsalted butter
  • 8 oz of cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 1/2 cup of low-sodium chicken broth
  • 1/2 cup of unsweetened almond milk (or your preferred milk)
  • 1 tablespoon of cornstarch
  • 1 tablespoon of fresh thyme, chopped (or 1 teaspoon of dried thyme)
  • 1 tablespoon of fresh parsley, chopped (optional)

Instructions

  1. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper on both sides.
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    • In a separate bowl, whisk together the almond milk and cornstarch until smooth. Pour the mixture into the skillet, stirring constantly until the sauce thickens, about 2-3 minutes.
    • Stir in the thyme and adjust the seasoning with salt and pepper, if needed.
  3. Combine and Serve:
    • Return the chicken breasts to the skillet, spooning the mushroom sauce over the top. Cook for an additional 2 minutes to allow the flavors to meld.
    • Serve hot, garnished with fresh parsley if desired.
