Roasted Honey Mustard Brussels Sprouts

Brussels sprouts are rich in vitamins C and K, fiber, and antioxidants. The honey and mustard not only add flavor but also provide additional health benefits, such as anti-inflammatory properties and a boost of energy.

Ingredients

  • 1 lb of Brussels sprouts, trimmed and halved
  • 2 tablespoons of olive oil
  • 2 tablespoons of honey
  • 2 tablespoons of Dijon mustard
  • 1 tablespoon of apple cider vinegar
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 1 tablespoon of chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until they are evenly coated.
  3. Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through for even cooking.
  4. Make the Honey Mustard Glaze: While the Brussels sprouts are roasting, whisk together the honey, Dijon mustard, apple cider vinegar, and minced garlic in a small bowl.
  5. Coat with Glaze: Remove the Brussels sprouts from the oven and transfer them back to the large bowl. Drizzle the honey mustard glaze over the Brussels sprouts and toss until they are well coated.
  6. Final Roast: Place the glazed Brussels sprouts back on the baking sheet and roast for an additional 5-7 minutes, allowing the glaze to caramelize slightly.
  7. Serve: Remove from the oven and garnish with fresh parsley, if desired. Serve warm and enjoy!
