Roasted Beets with Orange Sauce

Ingredients

  • 4 medium-sized beets, peeled and cut into wedges
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Zest of 1 orange
  • Juice of 1 orange
  • 1 tablespoon of honey or maple syrup
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of Dijon mustard
  • 2 tablespoons of chopped fresh parsley for garnish (optional)

Instructions

  1. Prepare the Beets:
    • Preheat your oven to 400°F (200°C).
    • Toss the beet wedges in olive oil, salt, and pepper.
    • Spread them evenly on a baking sheet lined with parchment paper.
