Muddy Buddies are a popular snack medley that often features a mix of chocolate, peanut butter, and powdered sugar. For a healthier twist, you can enjoy this treat with a boost of protein and less sugar. Here’s a recipe to satisfy your cravings while keeping it nutritious.

Ingredients

  • 4 cups of whole-grain cereal (such as Chex)
  • 1/2 cup of natural peanut butter or almond butter
  • 1/2 cup of dark chocolate chips
  • 1/4 cup of honey or maple syrup
  • 1 teaspoon of vanilla extract
  • 1/2 cup of protein powder (your choice flavor)
  • 1/4 cup of cocoa powder (optional, for extra chocolate flavor)
  • 1/4 cup of powdered sugar or a sugar-free alternative (optional)

Instructions

  1. Melt Chocolate and Peanut Butter:
    In a microwave-safe bowl, combine the dark chocolate chips and natural peanut butter. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.
  2. Add Sweetener and Vanilla:
    Stir in the honey (or maple syrup) and vanilla extract into the melted chocolate and peanut butter mixture until well combined.
  3. Coat the Cereal:
    In a large mixing bowl, place the whole-grain cereal. Pour the melted mixture over the cereal and gently stir until all the pieces are evenly coated.
  4. Add Protein Powder:
    Sprinkle the protein powder over the coated cereal. You can also add cocoa powder if you desire a richer chocolate flavor. Toss until the cereal is evenly coated with the protein powder.
  5. Optional Sweet Dusting:
    If desired, sprinkle a small amount of powdered sugar or a sugar-free alternative over the mix for a touch of sweetness. Toss to coat.
  6. Cool and Store:
    Spread the mixture onto a baking sheet lined with parchment paper. Allow it to cool and set completely. Once cooled, store the snack mix in an airtight container.
