No-Bake Turtle Cheesecake

Treat yourself to a healthier version of this classic dessert that combines the decadent flavors of luscious chocolate, smooth caramel, crunchy pecans, and creamy cheesecake — all without the need for baking.

Ingredients

Crust
  • 1 ½ cups of graham cracker crumbs
  • ¼ cup of unsalted butter, melted
  • 2 tablespoons honey
Cheesecake Filling
  • 16 oz of reduced-fat cream cheese, softened
  • 1 cup of non-fat Greek yogurt
  • ¼ cup of honey or maple syrup
  • 1 teaspoon of vanilla extract
Topping
  • ½ cup of sugar-free caramel sauce
  • ½ cup of dark chocolate chips, melted
  • ½ cup of pecans, chopped

Instructions

  1. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and honey. Mix until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Place in the refrigerator to set.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth. Add Greek yogurt, honey, and vanilla extract, and continue to beat until the mixture is creamy and well combined.
    • Pour the filling over the prepared crust, smoothing the top with a spatula.
  3. Add Toppings:
    • Drizzle the caramel sauce over the cheesecake filling.
    • Melt the dark chocolate chips in a microwave or double boiler, then drizzle over the caramel layer.
    • Sprinkle the chopped pecans evenly over the top.
  4. Chill:
    • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or until set.
  5. Serve:
    • Once set, remove the cheesecake from the pan, slice, and enjoy!
