Mushroom Brie Omelet

This indulgent breakfast or brunch option combines the umami flavors of mushrooms with the creamy richness of Brie cheese. It’s a harmonious fusion of classic French omelet techniques and gourmet ingredients.

Ingredients

  • 3 large eggs
  • 1/4 cup of milk (or a milk alternative)
  • 1 tablespoon of olive oil or butter
  • 1 cup of fresh mushrooms (such as cremini or button mushrooms), sliced
  • 2 oz of brie cheese, rind removed, and cut into small pieces
  • 1 tablespoon of chopped fresh chives for garnish
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients:
    • Crack the eggs into a bowl, add the milk, and whisk until well combined. Season with a pinch of salt and pepper.
    • Slice the mushrooms and cut the brie into small pieces.
  2. Cook the Mushrooms:
    • Heat the olive oil or butter in a non-stick skillet over medium heat.
    • Add the mushrooms and sauté until they are golden brown and tender, about 5-7 minutes. Remove the mushrooms from the skillet and set aside.
  3. Cook the Omelet:
    • In the same skillet, pour the egg mixture and let it cook undisturbed for about 2-3 minutes until the edges start to set.
    • Gently lift the edges of the omelet with a spatula, allowing the uncooked eggs to flow underneath. Continue this process until the omelet is mostly cooked.
  4. Add Fillings:
    • Evenly distribute the sautéed mushrooms and brie pieces over one half of the omelet.
    • Carefully fold the other half over the fillings.
  5. Serve:
    • Slide the omelet onto a plate. Garnish with fresh chives if desired. Serve immediately.
