This indulgent breakfast or brunch option combines the umami flavors of mushrooms with the creamy richness of Brie cheese. It’s a harmonious fusion of classic French omelet techniques and gourmet ingredients.
Ingredients
- 3 large eggs
- 1/4 cup of milk (or a milk alternative)
- 1 tablespoon of olive oil or butter
- 1 cup of fresh mushrooms (such as cremini or button mushrooms), sliced
- 2 oz of brie cheese, rind removed, and cut into small pieces
- 1 tablespoon of chopped fresh chives for garnish
- Salt and pepper to taste
Instructions
- Prepare the Ingredients:
- Crack the eggs into a bowl, add the milk, and whisk until well combined. Season with a pinch of salt and pepper.
- Slice the mushrooms and cut the brie into small pieces.

- Cook the Mushrooms:
- Heat the olive oil or butter in a non-stick skillet over medium heat.
- Add the mushrooms and sauté until they are golden brown and tender, about 5-7 minutes. Remove the mushrooms from the skillet and set aside.

- Cook the Omelet:
- In the same skillet, pour the egg mixture and let it cook undisturbed for about 2-3 minutes until the edges start to set.
- Gently lift the edges of the omelet with a spatula, allowing the uncooked eggs to flow underneath. Continue this process until the omelet is mostly cooked.

- Add Fillings:
- Evenly distribute the sautéed mushrooms and brie pieces over one half of the omelet.
- Carefully fold the other half over the fillings.

- Serve:
- Slide the omelet onto a plate. Garnish with fresh chives if desired. Serve immediately.
