Mackerel and Bean Salad with Lemon Dressing

Ingredients

For the Salad:
  • 1 can (about 5-6 oz) of mackerel, drained and flaked
  • 1 cup of canned white beans, drained and rinsed
  • 1 cup of canned kidney beans, drained and rinsed
  • 1 cup of fresh or canned string beans, cut into 1-inch pieces (if fresh, lightly blanched)
  • 1/2 of a red onion, finely chopped
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of fresh parsley, chopped
For the Lemon Dressing:
  • 1/4 cup of extra virgin olive oil
  • Juice of 1 large lemon
  • 1 teaspoon of Dijon mustard
  • 1 teaspoon of honey (optional)
  • Salt and pepper to taste

Instructions
