Ingredients
- 1 tablespoon of olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 cup of green peas (frozen or fresh)
- 1 lb of boneless, skinless chicken breast, cut into bite-sized pieces
- 4 cups of low-sodium chicken broth
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- 1 cup of low-fat milk
- 2 tablespoons of cornstarch, mixed with 2 tablespoons of water (for thickening)
- 1 cup of diced potatoes (optional, for a thicker soup)
- Whole-grain bread for serving
Instructions
- Sauté the Vegetables:
- Turn on the Instant Pot and select the ‘Sauté’ function. Add olive oil.
- Once the oil is hot, add the onion and garlic. Sauté until the onion is translucent.
- Add the carrots and celery. Continue to sauté for about 3-4 minutes.
 
- Add Chicken and Spices:
- Add the chicken pieces to the pot, along with thyme, rosemary, salt, and pepper. Stir to combine.
 
- Pressure Cook the Soup:
- Pour in the chicken broth and add the diced potatoes (if using).
- Secure the lid on the Instant Pot and set it to ‘Pressure Cook’ on high for 10 minutes.
- Once done, allow the pressure to release naturally for 10 minutes before performing a quick release.
 
- Finish the Soup:
- Select ‘Sauté’ again. Stir in the green peas and the cornstarch mixture.
- Gradually add the milk, stirring continuously until the soup thickens slightly.
- Adjust seasoning with additional salt and pepper if needed.
 
- Serve:
- Ladle the soup into bowls and serve with slices of warm whole-grain bread.
