Heavenly Chicken with Angel Hair Pasta

Ingredients

  • 8 oz of angel hair pasta
  • 2 tablespoons of olive oil
  • 1 lb of boneless, skinless chicken breast, cut into bite-sized pieces
  • 3 garlic cloves, minced
  • 1/4 teaspoon of red pepper flakes (optional)
  • 2 cups of fresh broccoli florets
  • 1/2 cup of low-sodium chicken broth
  • 1/4 cup of grated Parmesan cheese

  • 1 tablespoon of lemon juice
  • 2 tablespoons of chopped fresh parsley for garnish

Instructions

  1. Cook the Pasta:
    • In a large pot of boiling salted water, cook the angel hair pasta according to package instructions. Once cooked, drain and set aside.
  2. Prepare the Chicken:
    • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

  4. Combine Ingredients:
    • Return the cooked chicken to the skillet. Add the cooked pasta, Parmesan cheese, and lemon juice. Toss everything together until well combined and heated through. Adjust seasoning with additional salt and pepper, if needed.
  5. Serve:
    • Garnish with fresh parsley before serving.
