This quick and easy breakfast burrito combines a variety of flavorful ingredients wrapped in a warm tortilla. It’s a great source of protein and fiber, making it a balanced meal to kickstart your day.
Ingredients
- 1 whole-wheat tortilla
- 2 large eggs
- 2 slices of low-sodium deli turkey or chicken breast
- 1/4 cup of shredded reduced-fat cheese (such as cheddar or mozzarella)
- 1/4 cup of diced tomatoes
- 1/4 cup of baby spinach leaves
- 1/4 of an avocado, sliced
- 1 tablespoon of salsa (optional)
- Salt and pepper to taste
- 1 teaspoon of olive oil
Instructions
- Prepare the Eggs: In a small bowl, whisk the eggs with a pinch of salt and pepper. Heat the olive oil in a non-stick skillet over medium heat. Add the eggs and scramble until cooked through. Remove from heat.
- Warm the Tortilla: While the eggs are cooking, warm the whole-wheat tortilla in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
- Assemble the Burrito:
- Lay the warm tortilla flat on a clean surface.
- Place the scrambled eggs in the center of the tortilla.
- Layer the deli meat slices on top of the eggs.
- Sprinkle the shredded cheese over the deli meat.
- Add the diced tomatoes and baby spinach leaves.
- Place the avocado slices on top.
- If desired, add a spoonful of salsa for extra flavor.
 
- Wrap the Burrito: Fold the sides of the tortilla over the filling, then roll from the bottom to the top to enclose the ingredients.
