Grilled Chicken and Orange Salad

This refreshing and nutritious chicken salad is perfect for a light lunch or dinner. It combines the lean protein of chicken breast with the tangy sweetness of oranges, complemented by fresh greens and a zesty dressing.

Ingredients

For the Salad
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 4 cups of mixed salad greens (e.g., spinach, arugula, and kale)
  • 2 large oranges, peeled and segmented
  • 1/4 cup of sliced almonds, toasted
  • 1/4 cup of crumbled feta cheese
For the Dressing
  • 3 tablespoons of orange juice
  • 2 tablespoons of olive oil
  • 1 tablespoon of apple cider vinegar
  • 1 teaspoon of honey
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken:
    • Preheat the grill to medium-high heat.
    • In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Rub the mixture evenly over the chicken breasts.
    • Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C).
