Ingredients
- 4 large bell peppers (any color)
- 1 lb of ground turkey
- 4 large eggs
- 1 cup of cooked quinoa or brown rice
- 1 small onion, finely chopped

- 1 teaspoon of cumin

Instructions
- Prepare the Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish, cut side up.
- Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent. Add the ground turkey, oregano, cumin, salt, and pepper. Cook until the turkey is browned and fully cooked.
- Mix the Filling: In a large bowl, combine the cooked turkey mixture, quinoa or brown rice, and diced tomatoes. Mix well to ensure all ingredients are evenly distributed.
- Stuff the Peppers: Spoon the turkey mixture into each bell pepper, filling them about 3/4 full.
- Add the Eggs: Carefully crack an egg into each pepper over the turkey mixture, taking care not to break the yolk.
- Bake: Place the stuffed peppers in the preheated oven and bake for 25-30 minutes or until the egg whites are set. If using, sprinkle mozzarella cheese on top of each pepper during the last 5 minutes of baking.
- Garnish and Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley or cilantro before serving.
