Ingredients
- 1 cup of rolled oats
- 1/2 cup of hazelnuts
- 1/4 cup of almond butter
- 1/4 cup of honey or maple syrup
- 1/4 cup of unsweetened cocoa powder
- 1/2 teaspoon of vanilla extract
- A pinch of salt
- 2 tablespoons of ground flax seeds
- 2 tablespoons of dark chocolate chips (optional)
Instructions
- Prepare the Ingredients:
- If your hazelnuts are not already roasted, preheat your oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and roast for about 10 minutes, or until fragrant. Allow them to cool, then rub them with a clean kitchen towel to remove the skins.
- Blend Dry Ingredients:
- In a food processor, combine the rolled oats, hazelnuts, cocoa powder, and salt. Pulse until the mixture resembles a coarse meal.
- Mix Wet Ingredients:
- Add the almond butter, honey or maple syrup, and vanilla extract to the food processor. Blend until the mixture is well combined and starts to stick together.
- Add Extras:
- Stir in the flax seeds and dark chocolate chips (if using) by hand until they are evenly distributed throughout the mixture.
- Form the Balls:
- Scoop out a tablespoon of the mixture and roll it between your palms to form a ball. Repeat until all the mixture is used. You should get about 12-15 balls, depending on size.
- Chill and Serve:
- Place the balls on a plate or baking sheet and refrigerate for at least 30 minutes to help them firm up. Store in an airtight container in the fridge for up to two weeks.
