Chicken Ratatouille

Ratatouille is a classic French Provençal stewed vegetable dish that is flavorful, nutritious, and comforting. By adding chicken, you can turn this traditional side into a hearty main course that’s perfect for a cozy dinner.

Ingredients

  • 2 tablespoons of olive oil
  • 1 lb of boneless, skinless chicken breast, cut into bite-sized pieces

  • 1 medium eggplant, diced
  • 1 large zucchini, sliced
  • 1 large bell pepper, chopped
  • 2 cups of cherry tomatoes, halved
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1/4 cup of fresh basil, chopped
  • 1 tablespoon of balsamic vinegar (optional, for extra flavor)

Instructions

  1. Prepare the Chicken:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  2. Cook the Vegetables:
    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the onion and garlic, and sauté for 2-3 minutes until the onion becomes translucent.
    • Stir in the eggplant, zucchini, and bell pepper. Cook for about 5-7 minutes, until the vegetables start to soften.
    • Add the cherry tomatoes, thyme, and oregano. Season with additional salt and pepper as needed.
    • Cover and let the mixture simmer for about 10-15 minutes, stirring occasionally, until all vegetables are tender.
  3. Combine and Serve:
    • Return the chicken to the skillet with the vegetables and stir well to combine.
    • Optional: Stir in the balsamic vinegar for a tangy depth of flavor.
    • Remove from heat, sprinkle with fresh basil, and serve hot.
