Chicken Quesadillas

Chicken quesadillas are a popular Mexican-inspired dish that combines the savory flavors of seasoned chicken, melted cheese, and other delicious ingredients, all wrapped in a warm, toasted tortilla. Ingredients

  • 2 whole-wheat tortillas
  • 1 cup of boneless, skinless chicken breast, cooked and shredded
  • 1/2 cup of shredded reduced-fat cheddar cheese
  • 1/4 cup of black beans, rinsed and drained
  • 1/4 cup of diced bell peppers (any color)
  • 1/4 cup of diced onions
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of chili powder
  • Salt and pepper to taste
  • 1/4 cup of fresh salsa or pico de gallo
  • 1/4 cup of plain Greek yogurt (as a healthier substitute for sour cream)
  • 2 tablespoons of chopped fresh cilantro for garnish (optional)

Instructions

  1. Prepare the Filling:
    • In a skillet, heat the olive oil over medium heat.
    • Add the diced onions and bell peppers, and sauté until softened, about 3-4 minutes.
    • Stir in the shredded chicken, black beans, cumin, chili powder, salt, and pepper. Cook for another 2 minutes, mixing everything well.
  2. Assemble the Quesadillas:
    • Lay one whole-wheat tortilla flat.
    • Evenly spread the chicken and vegetable mixture over the tortilla.
    • Sprinkle the shredded cheese over the filling.
    • Top with the other tortilla.
  3. Cook the Quesadillas:
    • Wipe the skillet clean and lightly coat with non-stick cooking spray or a small amount of olive oil.
    • Place the assembled quesadilla in the skillet over medium heat.
    • Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted.
  4. Serve:
    • Remove the quesadilla from the skillet and cut into wedges.
    • Serve with fresh salsa or pico de gallo, a dollop of Greek yogurt, and garnish with fresh cilantro if desired.
