Chicken and Mushroom Fricassee

Ingredients

  • 1 tablespoon of olive oil
  • 1 lb of boneless, skinless chicken breast, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 8 oz of mushrooms, sliced
  • 1 cup of low-sodium chicken broth
  • 1/2 cup of skim milk
  • 2 tablespoons of all-purpose flour
  • 1 teaspoon of dried thyme
  • 1 tablespoon of fresh parsley, chopped
  • 1 tablespoon of lemon juice
  • 2 cups of cooked brown rice or whole-grain pasta for serving (optional)

Instructions

  1. Prepare the Chicken: Season the chicken pieces with salt and pepper. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Cook the Vegetables: In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms and continue to cook until the mushrooms are tender, about 5 more minutes.
  3. Make the Sauce: In a small bowl, whisk together the chicken broth, skim milk, and flour until smooth. Pour the mixture into the skillet with the onions and mushrooms. Stir in the dried thyme and bring to a simmer. Cook until the sauce thickens, about 5 minutes.
  4. Combine Ingredients: Return the cooked chicken to the skillet and stir to coat with the sauce. Add the lemon juice and stir well. Cook for an additional 2-3 minutes to heat through.
  5. Garnish and Serve: Remove from heat and sprinkle with fresh parsley. Serve the fricassee over cooked brown rice or whole-grain pasta if desired.
