Chicken and Eggplant Mediterranean Delight

This delightful Mediterranean-inspired dish combines the rich flavors of chicken and eggplant with a variety of herbs and spices, offering a great way to incorporate more vegetables and lean protein into your diet.

Ingredients

  • 1 lb of boneless, skinless chicken breast
  • 1 large eggplant, diced
  • 2 tablespoons of olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) of diced tomatoes, drained
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of crumbled feta cheese (optional)

Instructions

  1. Prepare the Ingredients:
    • Dice the eggplant and chop the onion and garlic.
  2. Cook the Chicken:
    • Season the chicken breasts with salt and pepper on both sides.
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the chicken breasts and cook until golden brown on both sides and cooked through, about 6-8 minutes per side.
    • Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables:
    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the onion and garlic, and sauté until the onion is translucent.
    • Add the diced eggplant, and cook until it starts to soften, about 5 minutes.
  4. Add Tomatoes and Seasonings:
    • Stir in the diced tomatoes, oregano, basil, red pepper flakes (if using), and more salt and pepper to taste.
    • Simmer the mixture for 10 minutes, allowing the flavors to combine.
  5. Combine and Serve:
    • Return the chicken to the skillet, nestling it into the eggplant mixture.
    • Cover and cook for an additional 5 minutes to heat through.
    • Garnish with fresh parsley and feta cheese if desired.
    • Serve warm and enjoy!
