Chicken and Black Bean Burritos

Ingredients

  • 1 tablespoon of olive oil
  • 1 lb of boneless, skinless chicken breast, diced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon pf smoked paprika
  • Salt and pepper to taste
  • 1 can (15 oz) of black beans, drained and rinsed
  • 1 cup of corn kernels (fresh, frozen, or canned)
  • 1/4 cup of fresh cilantro, chopped
  • 8 whole-wheat tortillas
  • 1 cup of shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup of Greek yogurt or sour cream (optional)
  • Salsa or hot sauce (optional)

Instructions

  1. Prepare the Chicken:
    • In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. Cook the Vegetables:
    • In the same skillet, add the onion and red bell pepper. Cook for 3-4 minutes until they begin to soften. Add the garlic, cumin, chili powder, smoked paprika, salt, and pepper. Cook for an additional 2 minutes, stirring frequently.
  3. Combine Ingredients:
    • Return the cooked chicken to the skillet. Add the black beans and corn. Cook for another 5 minutes, allowing the flavors to meld together. Stir in the chopped cilantro and remove from heat.
  4. Assemble the Burritos:
    • Lay a whole-wheat tortilla flat. Add about 1/2 cup of the chicken and bean mixture to the center of the tortilla. Sprinkle with shredded cheese. Fold in the sides and roll up the tortilla to enclose the filling. Repeat with the remaining tortillas and filling.
  5. Serve:
    • Serve the burritos warm with Greek yogurt or sour cream and salsa or hot sauce on the side, if desired.
