Breakfast Tacos

Originating from Mexican cuisine, breakfast tacos are a globally-popular morning meal that combines the savory and satisfying elements of traditional breakfast foods with the convenience and versatility of tacos.

Ingredients

  • 4 small whole-wheat tortillas
  • 8 oz of turkey sausage, crumbled
  • 4 large eggs
  • 1/4 cup of low-fat milk
  • 1/4 cup of bell pepper, diced
  • 1/4 cup of red onion, diced
  • 1/2 cup of shredded reduced-fat cheddar cheese
  • 1/2 cup of cucumber, diced
  • 1/2 cup of Roma tomatoes, diced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)
  • 1/4 cup of plain Greek yogurt (as a healthier substitute for sour cream)
  • Salsa for serving

Instructions

  1. Cook the Turkey Sausage: In a skillet over medium heat, add the turkey sausage. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  2. Sauté Vegetables: In the same skillet, add olive oil. Sauté the diced bell pepper and red onion until softened, about 5 minutes.
  3. Prepare the Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the mixture into the skillet with the vegetables and scramble until fully cooked. Remove from heat.
  4. Assemble the Tacos: Warm the tortillas in a pan or microwave. Divide the scrambled eggs and vegetables evenly among the tortillas. Top each with cooked turkey sausage, diced cucumber, tomatoes, and a sprinkle of cheddar cheese.
  5. Garnish and Serve: Garnish with fresh cilantro if desired, and serve with a dallop of Greek yogurt and a side of salsa.
