BLT Bowl

A delicious and healthy twist on the classic BLT sandwich, this BLT bowl is a nutritious and satisfying meal that combines protein, healthy fats, and plenty of vegetables, delivering all the flavors you love in a lighter, more wholesome way.

Ingredients

  • 2 cups of chopped romaine lettuce
  • 1 cup of cherry tomatoes, halved
  • 4 slices of turkey bacon, cooked and crumbled
  • 1 avocado, diced
  • 1/2 cup of corn kernels (fresh, canned, or frozen)
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of shredded cheddar cheese (optional)
  • 2 tablespoons of mayonnaise or Greek yogurt
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • 1 tablespoon of chopped fresh parsley for garnish

Instructions

  1. Prepare the Dressing:
    • In a small bowl, mix the mayonnaise or Greek yogurt with the lemon juice. Add salt and pepper to taste. Set aside.
  2. Assemble the Bowl:
    • In a large bowl, layer the chopped romaine lettuce as the base.
    • Add the halved cherry tomatoes, crumbled turkey bacon, diced avocado, corn kernels, and red onion.
    • Sprinkle with shredded cheddar cheese if using.
  3. Drizzle and Garnish:
    • Drizzle the prepared dressing over the top of the salad.
    • Garnish with chopped fresh parsley.
  4. Serve:
    • Toss gently to combine all the ingredients and serve immediately for the best flavor and texture.
