Ingredients
- 1 lb of lean beef (such as sirloin), cut into cubes
- 2 tablespoons of olive oil

- 2 garlic cloves, minced

- 1 large zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 4 medium tomatoes, diced

Instructions
- Prepare the Beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add the remaining olive oil. Add the onion and garlic, sautéing until the onion becomes translucent.
- Cook Eggplant and Zucchini: Add the eggplant and zucchini to the skillet, cooking until they begin to soften.
- Add Peppers and Tomatoes: Stir in the red and yellow bell peppers, along with the diced tomatoes. Return the beef to the skillet.
- Seasoning: Sprinkle the thyme, rosemary, and oregano over the mixture. Season with salt and pepper to taste.
- Simmer: Cover the skillet and let the ratatouille simmer for about 20-25 minutes, or until the vegetables are tender and the beef is cooked through.
