Almond and Cranberry Energy Balls

These energy balls are not only tasty but also provide a good balance of carbohydrates, healthy fats, and protein, making them a perfect pre- or post-workout snack, or an on-the-go energy boost. Feel free to add a sprinkle of dark chocolate chips for extra flavor.

Ingredients

  • 1 cup of almonds
  • 1 cup of dried cranberries
  • 1/2 cup of rolled oats
  • 1/4 cup of honey or maple syrup
  • 1/4 cup of almond butter
  • 1 teaspoon of vanilla extract
  • A pinch of salt
  • 1 tablespoon of ground flax seeds (optional, for added nutrition)

Instructions

  1. Prepare the Ingredients: Place the almonds in a food processor and pulse until finely chopped.
  2. Mix the Ingredients: Add the dried cranberries, rolled oats, honey (or maple syrup), almond butter, vanilla extract, and salt to the processor. If using, add the flax seeds as well.
  3. Blend Together: Process the ingredients until they are well combined and form a sticky dough. You may need to stop and scrape down the sides of the food processor a few times.
  4. Form the Balls: Scoop out about a tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is used.
  5. Chill: Place the energy balls on a tray and refrigerate for at least 30 minutes to help them set.
  6. Store: Store in an airtight container in the refrigerator for up to two weeks.
