Ingredients

  • 1/2 cup of dry white wine
  • 1/4 cup of black olives, pitted and sliced

Instructions

  1. Prepare the Snapper: Season the red snapper fillets with salt and pepper on both sides.
  2. Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute, being careful not to burn the garlic.
  3. Make the Sauce: Stir in the diced tomatoes, white wine, olives, capers, thyme, oregano, and red pepper flakes. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.
  4. Cook the Snapper: Place the snapper fillets into the skillet, nestled into the sauce. Cover the skillet and let the fish cook for 8-10 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Serve: Carefully transfer the snapper fillets to serving plates. Spoon the Provençal sauce over the fish. Garnish with fresh parsley and serve with lemon wedges on the side.
