One-Pan Chicken Alfredo

Ingredients

  • 2 tablespoons of olive oil
  • 1 lb of boneless, skinless chicken breast, cut into bite-sized pieces
  • 3 garlic cloves, minced
  • 1 teaspoon of Italian seasoning
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 3 cups of low-sodium chicken broth
  • 1 cup of low-fat milk
  • 12 oz of whole-grain penne pasta
  • 2 cups of broccoli florets
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of chopped fresh parsley (optional)

Instructions

  1. Cook the Chicken: Heat the olive oil in a large, deep skillet over medium heat. Add the chicken pieces and cook until browned on all sides, about 5 minutes.
  2. Add the Spices: Add the garlic, Italian seasoning, salt, and black pepper to the skillet. Stir and cook for another minute until the garlic is fragrant.
