Ingredients
- 2 whole-wheat tortillas
- 1 cup of boneless, skinless chicken breast, cooked and shredded

- 1/4 cup of black beans, rinsed and drained
- 1/4 cup of diced bell peppers (any color)
- 1/4 cup of diced onions
- 1 tablespoon of olive oil
- 1/4 teaspoon of cumin
- 1/4 teaspoon of chili powder
- Salt and pepper to taste
- 1/4 cup of fresh salsa or pico de gallo
- 1/4 cup of plain Greek yogurt (as a healthier substitute for sour cream)
- 2 tablespoons of chopped fresh cilantro for garnish (optional)
Instructions
- Prepare the Filling:
- In a skillet, heat the olive oil over medium heat.
- Add the diced onions and bell peppers, and sauté until softened, about 3-4 minutes.
- Stir in the shredded chicken, black beans, cumin, chili powder, salt, and pepper. Cook for another 2 minutes, mixing everything well.
- Assemble the Quesadillas:
- Lay one whole-wheat tortilla flat.
- Evenly spread the chicken and vegetable mixture over the tortilla.
- Sprinkle the shredded cheese over the filling.
- Top with the other tortilla.
- Cook the Quesadillas:
- Wipe the skillet clean and lightly coat with non-stick cooking spray or a small amount of olive oil.
- Place the assembled quesadilla in the skillet over medium heat.
