Baja-Style Salmon Tacos

This recipe combines the rich taste of salmon with a zesty slaw and creamy sauce, all wrapped in a warm corn tortilla. It’s high in protein and healthy fats, while being moderate in carbohydrates. Feel free to customize it with your favorite toppings.

Ingredients

For the Salmon:
  • 4 salmon fillets (approx. 6 oz each)
  • 1 tablespoon of olive oil
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin

  • Salt and pepper to taste
For the Slaw:

Instructions

  1. Prepare the Salmon:
    • Preheat your grill or stovetop grill pan over medium-high heat.
    • In a small bowl, mix the chili powder, cumin, paprika, salt, and pepper.
    • Rub the salmon fillets with olive oil and sprinkle the spice mixture evenly over each fillet.
    • Grill the salmon for about 3-4 minutes per side, or until it flakes easily with a fork.
  2. Prepare the Slaw:
    • In a large bowl, combine the shredded cabbage, carrots, and cilantro.
    • Add lime juice, salt, and pepper. Toss until well combined and set aside.
  3. Prepare the Sauce:
    • In a small bowl, mix together the Greek yogurt, mayonnaise, lime juice, sriracha, salt, and pepper.
    • Adjust the seasoning to taste.
  4. Assemble the Tacos:
    • Warm the corn tortillas in a dry skillet or on the grill for about 30 seconds on each side.
    • Flake the grilled salmon into chunks.
    • Place a portion of salmon on each tortilla, top with the slaw, and drizzle with the yogurt sauce.
    • Add avocado slices if desired and serve with lime wedges.
