Ingredients

  • 4 slices of whole-grain bread
  • 2 large eggs
  • 1/2 cup of low-fat milk (or a milk alternative)
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • A pinch of salt
  • 1 tablespoon of unsalted butter or coconut oil
  • Fresh berries or sliced banana for topping
  • Maple syrup or honey (optional)

Instructions

  1. Prepare the Egg Mixture: In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until well combined.
  2. Soak the Bread: Dip each slice of whole-grain bread into the egg mixture, ensuring both sides are well-coated. Let the bread soak for about 30 seconds on each side.
  3. Cook the French Toast: In a large non-stick skillet, melt the butter or coconut oil over medium heat. Once hot, add the soaked bread slices to the skillet. Cook each side for about 3-4 minutes, or until golden brown.
  4. Serve: Serve the French toast warm, topped with fresh berries or sliced banana. Drizzle with maple syrup or honey if desired.
