Hearty Breakfast Burrito

This quick and easy breakfast burrito combines a variety of flavorful ingredients wrapped in a warm tortilla. It’s a great source of protein and fiber, making it a balanced meal to kickstart your day.

Ingredients

  • 1 whole-wheat tortilla
  • 2 large eggs
  • 2 slices of low-sodium deli turkey or chicken breast
  • 1/4 cup of shredded reduced-fat cheese (such as cheddar or mozzarella)
  • 1/4 cup of diced tomatoes
  • 1/4 cup of baby spinach leaves
  • 1/4 of an avocado, sliced
  • 1 tablespoon of salsa (optional)
  • Salt and pepper to taste
  • 1 teaspoon of olive oil

Instructions

  1. Prepare the Eggs: In a small bowl, whisk the eggs with a pinch of salt and pepper. Heat the olive oil in a non-stick skillet over medium heat. Add the eggs and scramble until cooked through. Remove from heat.
  2. Warm the Tortilla: While the eggs are cooking, warm the whole-wheat tortilla in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
  3. Assemble the Burrito:
    • Lay the warm tortilla flat on a clean surface.
    • Place the scrambled eggs in the center of the tortilla.
    • Layer the deli meat slices on top of the eggs.
    • Sprinkle the shredded cheese over the deli meat.
    • Add the diced tomatoes and baby spinach leaves.
    • Place the avocado slices on top.
    • If desired, add a spoonful of salsa for extra flavor.
  4. Wrap the Burrito: Fold the sides of the tortilla over the filling, then roll from the bottom to the top to enclose the ingredients.
  5. Serve: Cut the burrito in half and serve immediately. Enjoy!
