Ingredients
- 2 cups of chopped romaine lettuce
- 1 cup of cherry tomatoes, halved
- 4 slices of turkey bacon, cooked and crumbled
- 1 avocado, diced
- 1/2 cup of corn kernels (fresh, canned, or frozen)
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of shredded cheddar cheese (optional)
- 2 tablespoons of mayonnaise or Greek yogurt
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- 1 tablespoon of chopped fresh parsley for garnish
Instructions
- Prepare the Dressing:
- In a small bowl, mix the mayonnaise or Greek yogurt with the lemon juice. Add salt and pepper to taste. Set aside.
