Mashed potatoes are a classic comfort food, but they don’t have to be laden with butter and cream to taste delicious. Here’s a healthier version that retains all the creamy goodness with fewer calories and fat.
Ingredients
- 2 lbs of russet or Yukon Gold potatoes, peeled and cubed
- 1/2 cup of low-sodium chicken or vegetable broth
- 1/2 cup of plain Greek yogurt
- 2 tablespoons of olive oil
- 3 garlic cloves, minced
- Salt and pepper to taste
- Chopped fresh chives or parsley for garnish (optional)
Instructions
- Boil the Potatoes: Place the cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are tender, about 15-20 minutes.
- Drain and Smash: Drain the potatoes and return them to the pot. Let them sit for a minute to allow any excess water to evaporate.
- Add Flavor: Add the minced garlic, olive oil, and broth to the potatoes. Mash the potatoes using a potato masher or fork until they reach your desired consistency.
- Incorporate Greek Yogurt: Stir in the Greek yogurt until the mixture is smooth and creamy. Season with salt and pepper to taste.
