These delicious homemade fig bars are a healthier alternative to store-bought versions, packed with fiber and made without refined sugars. Enjoy them as a nourishing snack or a sweet treat!
Ingredients
- 1 cup of dried figs, de-stemmed and chopped
- 1 cup of water
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract
- 1 1/2 cups of rolled oats
- 1 cup of whole-wheat flour
- 1/2 cup of almond flour
- 1/4 cup of maple syrup
- 1/4 cup of coconut oil, melted
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
Instructions
- Prepare the Fig Filling:
- In a small saucepan, combine the chopped figs and water. Bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the figs are soft and the mixture has thickened.
- Remove from heat and stir in the lemon juice and vanilla extract. Allow to cool slightly, then blend the mixture until smooth using a food processor or blender.
- Make the Dough:
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix together the rolled oats, whole-wheat flour, almond flour, baking soda, and salt.
- Add the maple syrup and melted coconut oil to the dry ingredients, stirring until well combined. The mixture should be crumbly but hold together when pressed.
- Assemble the Fig Bars:
- Press half of the dough mixture into the prepared baking pan to form an even layer.
- Spread the fig filling over the dough layer.
- Top with the remaining dough mixture, pressing gently to adhere.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
- Allow to cool completely in the pan before cutting into bars.
