Corn Crunch Fritters

Ingredients

  • 2 cups of corn kernels (fresh or canned, drained if using canned)
  • 1/4 cup of green onions, chopped
  • 1/2 cup of whole-wheat flour
  • 1/4 cup of cornmeal
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of smoked paprika
  • 1/4 teaspoon of garlic powder

  • 1 large egg
  • 1/4 cup of low-fat milk
  • 2 tablespoons of fresh parsley, chopped
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Batter:
    • In a large bowl, combine the corn kernels and chopped green onions.
    • In a separate bowl, mix the whole-wheat flour, cornmeal, baking powder, salt, black pepper, smoked paprika, garlic powder, and onion powder.
    • Add the dry mixture to the corn and onion mixture, stirring until well combined.
  2. Mix Wet Ingredients:
    • In a small bowl, whisk together the egg and low-fat milk.
    • Pour the egg mixture into the corn batter and stir until the ingredients are just combined. Fold in the chopped parsley.
  3. Cook the Fritters:
    • Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
    • Spoon about 2 tablespoons of batter per fritter into the skillet, flattening slightly with the back of the spoon.
    • Cook the fritters for about 2-3 minutes on each side, until they are golden brown and crispy.
    • Add more oil as needed for the remaining fritters.
  4. Serve:
    • Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
