Asparagus is a great source of vitamins A, C, and K, as well as folate and fiber. The lemon sauce adds a refreshing zest without adding many calories, making this dish both delicious and an excellent choice for a healthy diet. Enjoy as a side or a light main course.
Ingredients
- 1 lb of fresh asparagus, trimmed
- 2 tablespoons of olive oil
- 2 tablespoons of fresh lemon juice
- 1 teaspoon of lemon zest
- 1 garlic clove, minced
- Salt and pepper to taste
- 2 tablespoons of chopped fresh parsley (optional)
- 1 tablespoon of grated Parmesan cheese (optional)
Instructions
- Prepare the Asparagus: Rinse the asparagus under cold water and trim the woody ends. You can do this by bending the asparagus until it snaps naturally.
- Cook the Asparagus: Steam the asparagus for about 4-5 minutes until they are tender but still crisp. Alternatively, you can blanch them in boiling water for 3-4 minutes and then transfer them immediately to an ice bath to stop the cooking process.
- Make the Lemon Sauce: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
- Combine and Serve: Arrange the cooked asparagus on a serving platter. Drizzle the lemon sauce over the top. If desired, sprinkle with chopped parsley and a light dusting of grated Parmesan cheese for added flavor.
- Enjoy: Serve immediately and enjoy!
